The sub-regional AOCs: in this category the requirements of the AOCs are higher than in the regional AOC category.
In Roussillon, in the north of the department, the AOC Côtes de Roussillon-Villages (2,191 ha) is made up of 32 villages. Since 2003, another appellation, Côtes de Roussillon-Les Aspres, located in the villages of Albères and Aspres, is situated between the regional AOC and Côtes de Roussillon-Villages.
The AOCs for natural sweet wines are two important sub-regional AOCs: AOC Revisaste (5,590 ha) which extends over 95 villages and the AOC Muscat de Rivesaltes (5,120 ha) which extends over 99 villages.
The communal AOCs are few in number, but are renowned for the high quality of their production. In Roussillon, the most renowned AOCs are Collioure (597 ha), Banyuls and Banyuls Grand Cru (1,173 ha) and Maury (507 ha).
It is a land blessed by God where the sun and the sea, the heat and the blue sky, the green shade of the vine leaves, the ochre, grey and white colours of the soils of the region, the dust, the drought and the winds are all elements that influence the wines of this area. The identity of the region appears in its vineyards and its wines.
The natural sweet wines such as Banyuls and Maury release an unctuous perfume of rare complexity of candied black fruits, figs, walnuts, liquorice, rancio, coffee and cocoa. On the palate, the sweet wines penetrate with intensity, the aromas that appear on the nose explode on the palate in a concert of sweetness, roundness and unctuousness. Banyuls Grand Cru and the best Maury wines have a very long aromatic persistence on the palate. These wines rival the great Ports.
